Investigation of the Committee of the Legislature of 1881 Concerning the Management of the Maine Insane Hospital Part 2 (14-354688-F019-I001-P1159.pdf)

A. (cont.) winter season we have vegetable hash, once a week in the morning. And then we send eggs occasionally in the morning. We generally cook for a meal about 125 dozen eggs. Could not say how often we send that number into the halls. I should say 2/3rds the canned fruit and berries go into the halls to the borders. Q. How many green peas do you furnish to the house? A. I think the 4th July we had 30 bushels. Last year, during the season5 1/2 barrels of green peas and 91 barrels of beans. Our dinner for the fourth is salmon, roast lamb potatoes, vegetables or peas, cracker pudding, white bread and crackers. On these holidays we send lemonade all through the halls. Q. How much does it take to go through ? A. (cont.) I believe I made 2 barrels last year. On Thanksgiving day we send a turkey dinner through the building, and vegetables and plum pudding. On Christmas after dinner we always have assembled in the hall and given them a treat there which is usually frosted cake, apples raisins, confectionary, and peanuts
